Apple Pie Cheesecake 12 Weeks of Holiday Treats


12 weeks until Christmas friends.  Yup, I am NOT kidding.  But not to worry because I have your back.  Help is right here for all your baking, treat making, homemade gift ideas needs.  For the next 3 months, one a week you will be handed a variety of amazing and totally delicious recipes and ideas to help you figure out the best of the best for holiday treats.  Yours truly along with a spectacular group of many talented food bloggers will provide you with a plethora of such resources once a week for the next 12 weeks.  So sit back, relax and be ready to drool. :-)
 
 
 
 
 
Speaking of drooling happiness how about a fabulous cheesecake recipe?  You know the kind with apples, cinnamon and sugary goodness all on top? Ahhh yes, an Apple Pie Cheesecake.  Heaven in a springform pan.  HEAVEN.
 
 
 
What could be better than a cookie crust that surrounds a silky cheesecake filling and then topped off with slices of cinnamon sugary dusted apples?  The perfect dessert for a special holiday party or even given as a gift to a special friend.  This cheesecake could easily be made for Thanksgiving, Christmas or even New Years.  A delicious dessert that is easy to make and makes everyone fall over backwards for seconds.
 
 
 
The crust is easily adaptable to your preference.  If you dont wish to use the crust recipe I have to share you can make a graham cracker or even a ginger cookie crust.  Apples go well with a variety of flavors.  I jazzed up the apple layer of the cheesecake by drizzling  it with a lovely homemade caramel sauce.
 
 
 
 
 
Apple Pie Cheesecake
(recipe discovered from Dinner with Julie)
 
Crust Ingredients:
1 cup flour
1/2 cup sugar
1 egg yolk (reserve egg white for later)
1/2 cup butter, at room temperature
 
Filling ingredients:
2 8oz. packages of cream cheese, at room temperature
1/2 cup sugar
2 large eggs
1 tsp vanilla extract
 
Apple topping ingredients:
2 large apples (I used Cortland) - peeled, cored and thinly sliced
1/2 cup sugar
1 tsp ground cinnamon
 
Directions:
1. Butter or grease 9" springform pan and set aside.
 
2. Prepare crust by combining all crust ingredients in a medium bowl.  Mix well all together with a fork or pastry cutter.  Ingredients will be appear as big soft crumbs.  Press mixture into prepared springform pan on bottom and up sides.
 
3. Prepare filling by beating cream cheese and sugar together until smooth and lump-free.  Add in eggs, one at a time and then reserved egg white and vanilla extract. Pour filling into prepared crust.  Preheat oven to 400 degrees F.
   
4. Prepare apple topping by combining sliced apples, sugar and cinnamon - toss gently so that sugar and cinnamon coat apples.  Arrange sugary-cinnamon apple slices over cheesecake filling to cover completely.
 
5. Bake cheesecake for 12 minutes at 400 degrees F. and then reduce to 375 to continue baking for another 30-35 minutes.  Cheesecake will be puffed and lightly browned but slightly jiggly in center when done.  Turn off oven and open door slightly to allow cheesecake to cool for a good 45-60 minutes.   Then take out of oven and cool further to room temperature.  Refrigerate over night before serving. 
 
 
 
Serve with a lovely drizzling of your favorite caramel sauce or freshly whipped cream.  A delight of a dessert!  Enjoy!

SAN FRANCISCO: Initial quantities of the iPhone 7 Plus have sold out globally as Apple Inc prepares to roll out its new gadget in stores, the company said Wednesday.
Supplies of the larger size of Apple´s new phone have been exhausted in all shades, and the smaller iPhone 7 has also sold out in the new jet black color, the company said.
Customers who enter Apple Stores Friday, when the gadgets hit shelves, will not be able to purchase the sold-out phones on site, but they can continue to place orders for their desired models online, Apple said.
"We sincerely appreciate our customers´ patience as we work hard to get the new iPhone into the hands of everyone who wants one as quickly as possible," Apple spokeswoman Trudy Muller said in a statement.
Apple launched the new phones at a San Francisco event earlier this month.
The gadgets feature improved cameras and eliminate the traditional headphone jack in favor of new technology.
Breaking with tradition, the company will not release first-weekend sales of the iPhone 7 and 7 Plus, saying the figure is more a reflection of supply than demand.
The decision sparked concerns among some on Wall Street, where many fear sales of the iPhone, a critical product for Apple, may be leveling off.
But U.S. wireless carriers Sprint Corp (S.N) and T-Mobile US Inc (TMUS.O) said on Tuesday they received strong pre-orders for the iPhone 7, sending Apple shares up.
"Based on everything I´ve seen it looks like demand is very strong," analyst Jan Dawson of Jackdaw Research wrote in an email.
The 5.5-inch iPhone model, known as the Plus, has sold out soon after launch since Apple introduced the size with the iPhone 6 in 2014. Phones in newly released finishes are also typically snapped up quickly by customers eager to showcase the latest iPhone design.

Apple files $1 billion suit against chip supplier Qualcomm

WASHINGTON: Apple Inc filed a $1 billion lawsuit against supplier Qualcomm Inc on Friday, following a US government lawsuit which accused the chip maker of using anti-competitive tactics to maintain its monopoly of a key semiconductor in mobile phones. 

Qualcomm is a major supplier to both Apple and Samsung for "modem" chips that help phones connect to wireless networks. Together the two accounted for 40 percent of Qualcomms $23.5 billion in revenue in its most recent fiscal year. In the lawsuit, Apple accused Qualcomm of overcharging for its chips and for refusing to pay some $1 billion in promised rebates for chip purchases. Apple said in its complaint that Qualcomm withheld the rebates because of Apples discussions with South Koreas antitrust regulator, which fined Qualcomm for what it called unfair practices in patent licensing. Qualcomm did not immediately respond to a request for comment on the Apple lawsuit. On Tuesday,

 the US Federal Trade Commission filed a lawsuit against Qualcomm, saying that the San Diego-based company used its dominant position as a supplier of certain phone chips to impose "onerous" supply and licensing terms on cellphone manufacturers like Apple and to weaken competitors. Qualcomm said in a statement Tuesday that it would "vigorously contest" the FTC complaint.

My job as a coach and trainer gets me around quite a bit. It is always thrilling to meet new people and to learn about all types of industries. During those encounters, I often get asked how companies like Google, Apple and Facebook do work. Before I left the USA for Switzerland, I used to work for ThoughtWorks out of their San Francisco office. During that time I had the chance to peek under the covers of a couple of those well known bay area players. Pretty much all of those companies are agile, not necessarily in a Scrum or XP way but they surely value their people with trust and autonomy. Yes, these are exactly the most important ingredients for self-organization.
The one company which I never even put a foot in was Apple – I drove by twice a day – but 1 Infinite Loop is a black box for me. So how does Apple do what it does? How could this company recover like a phoenix from the ashes? I admire Steve Jobs. He does magic on stage when showing Apple’s latest products. He has a strong personality and there are quite some stories floating around about his famous tantrums. So, how did this man turn around Apple? Well, to be honest I don’t believe that it was a one man show completely; however this one man is in the exact right position.
Let me explain how I see the role of Steve Jobs though Scrum glasses.
Each Scrum team consists of one ScrumMaster, a Team and one Product Owner. For larger projects you can have more Scrum Teams working together, which is called a Scrum of Scrums. A company wide Scrum of Scrums enables the company to do agile product portfolio management , which is crucial to overcome the stasis of annual plans. At the very top of those Scrum of Scrums, you have THE Product Owner, the over-Product Owner, the one person responsible for what gets developed in which order. Steve Jobs is exactly this person at Apple. Sure, he is CEO and has absolute power. However, in contrast to other CEOs which are too far removed from the details, Steve Jobs is exactly interested in these details. He had the whole iPhone redesigned because it had more than one button. He decides to accept or not to accept the products. He gives the acceptance criteria and he has to like what he sees or it does not see the light of the day.
To me this confirms that one of the most critical roles in a Scrum Team is the Product Owner. Sure, the best Product Owner with a lousy team will not succeed either, but a great team can only be on top of the game with a great Product Owner.
The success of a project depends on the Product Owner, its role but more importantly the person, and definitely NOT how good or detailed the requirements are. A good Product Owner enables the Team to rise above and make a great product the right way.

I actually have an APPLE recipe for you today instead of a PUMPKIN recipe! I feel like all I do is bake with pumpkin these days.  Which is not a bad thing at all believe me (I ADORE pumpkin!!) - but I like to provide a little variety in my baking to keep my friends, family and blog readers happy. :-)



When I came across this recipe for an Apple Pie Cake my eyes grew wide, my heart started to beat faster and bounced in my chair with happiness.  An Apple Pie Cake sounded AMAZING!  Boy, oh boy was it ever!  So yummy.  So easy to make. AND it only requires 6 ingredients to make!!!! Yup, only SIX

You will need a 9 inch springform pan to make this apple-lious treat. A lovely mixture of brown sugar, cinnamon, flour and (COLD) butter form the bottom, sides and top of this pie/cake.  You will first gently press a large portion of the brown sugar/flour mixture on the bottom and sides of the springform pan, fill the inside with all your prepared tart apples and then top apples with the remaining brown sugar/flour mixture.  Which becomes the top of the pie/cake. It all comes together like magic as you are using such simple ingredients to make a wonderfully unique and delicious dessert.  So grab some apples, your springform pan, a couple of ingredients from your pantry and fridge and preheat your oven to create a perfect Fall dessert.   Then invite me over for a piece - I will bring freshly sweetened whipped cream to go on top! ;-)


Apple Pie Cake
(from the famous Martha Stewart)

Ingredients:

2 cups flour
1 cup packed light-brown sugar
2 tsp ground cinnamon
2 sticks cold unsalted butter, cut into pieces
about 12 tart apples - such as Granny Smith
2 Tbsp lemon juice

Directions:

1. In a large bowl, combine flour, brown sugar and 1 tsp cinnamon. With a pastry cutter add in butter pieces and cut into flour mixture until small pea size pieces remain. 


2. Press 2/3 of the brown sugar/flour/butter mixture on the bottom and up 1 inch of the sides of a 9 inch springform pan. Set pan aside.


3. Preheat oven to 350 degrees F.  Prepare apples by peeling and then slicing into thin slices and placing in a large bowl.  Sprinkle apples with lemon juice so that they do not turn brown and then sprinkle with remaining 1 tsp of ground cinnamon.

4. Place sliced apples into the shell of your prepared springform pan, pressing down gently as you pack them in.  If the apples mound over the edge of your pan that is ok - the more the better!  Sprinkle remaining brown sugar/flour/butter mixture over apples.

5. Line a cookie sheet with tin foil and then place prepared dessert on top before popping the whole thing into the oven.   Bake for 1 hour and 15 minutes or until golden brown on top. When pie/cake come out of the oven carefully run a knife around the edge of the pan and then allow to cool so that the magical yummy treat can set.

Serve at room temperature if you wish!

Clafoutis.  Such a beautiful word that just rolls off your tongue.  Try it.  Pronounced as, Cla-Fou-Tee.  See wasnt that wonderful to say!?!

Just as wonderful as saying clafoutis I would like to introduce you to a very special food bog called, My Judy the FoodieMy Judy the Foodie was my assigned blog for the month of September for the Secret Recipe Club.  Not only is this food blog packed with amazing recipes that make your mouth water and drool but more importantly the love, dedication and happiness that has given life to this blog is just beautiful.  Shari, daughter to Judy (as in Judy of My Judy the Foodie), created this blog in an effort to teach herself how to be in the kitchen with confidence and ease along with honoring her mom who was a beautiful master in the kitchen. In reading through Sharis blog it became clear to me that her mother surrounded her herself by all things beautiful and meaningful including food.  And through her kitchen magic Judy created happiness and special moments all around her that were deeply treasured by all.  Shari has done a beautiful job through her own words (and videos!) exploring her mothers recipes and then sharing them with all of us lucky people.   I was honored to have been part of Judy and Sharis world for this past month as I soaked up all the deliciousness and kitchen passion through my SRC assignment.  Sending you hugs Shari!  You are an amazing woman!  Truly amazing. :-)




Apple Clafoutis was my pick from all the delicious recipes from My Judy the Foodie which I will share with you today.  I could not have been happier with my choice!  Clafoutis hold a special place in my heart as my family in France often make such a dessert.  Instead of using apples they use FRESH cherries, apricots or plums from their fruit trees.  Delicious!  The simplicity of mixing up a clafoutis is lovely.  Your fruit of choice is surrounded by simple ingredients such as eggs, milk, flour,sugar and melted butter which can all be mixed by hand.  Grab those apples you have in abundance right now and make your heart and palate sing with joy over this dessert.  And then invite me over for a piece - I can never have enough clafoutis! :-)




Apple Clafoutis
(recipe from My Judy the Foodie)
 
Batter Ingredients:
3 eggs
2/3 cup sugar
2/3 cup flour
1 cup milk
4 Tbsp butter, melted
1 tsp vanilla extract
1 tsp ground cinnamon (my addition as I can never go without adding cinnamon to an apple recipe)
 
Apple ingredients:
1 Tbsp butter
4 large apples, peeled, cored and cut into 1/2" slices
1/2 cup sugar
3 Tbsp rum (which both Shari and I omitted)

Directions:
 
1. Prepare your apples by melting 1 Tbsp butter and sugar in a large frying pan. Mix melted butter and sugar together to combine.  Peel, core and slice apples and then place into pan with melted butter and sugar.  Cook apples for 10 minutes, occasionally stirring gently.
 
2. Prepare batter while apples are cooking.  In a large bowl whisk together all batter ingredients.  Your batter will have the appearance similar to a pancake batter. 
 
3. Grease and dust with sugar a pie plate.  Add in 2 cups of batter to the prepared pie plate.  Gently add in cooked apples.  Leave the syrup of the apples behind for later use. Pour remaining batter over apples.
 
4. Bake your clafoutis in a 350 degrees oven for 30-35 minutes.  The clafoutis will be golden brown and set in the center when done.  The center will be just a little bit jiggly but thats what a clafoutis will do when baked.
 
5. Pour remaining apple syrup over your clafoutis when you take it out of the oven.
 
Serve warm or cold...either way is delicious!

So my visit to the Meat & Wine Co. last time had me craving for crumbles ever since.

It was towards the end of my Easter break and I was sick of being in bed with the flu once again, so with all my strength I got out of bed and into the kitchen. Apple crumble time! It felt like sunshine after a rainy day just being up and cooking.

Crumbles are relatively easy to make and can be done within 15 minutes. However the baking time is long - takes roughly 50 minutes but this just tests your patience and really you should do something while waiting (like cook dinner) unlike me looking into the oven like a child excitedly looking into the windows of a pet store.

I like my crumbles piping hot with a scoop of vanilla ice-cream (preferably Blue Ribbons). That is exactly the way I had it, while watching The Princess and the Frog.

I *love* this recipe. It is the best crumble Ive made - the apples slow-cooked with cinnamon were not too soft and mushy and the crumble on top was just the right texture and sweetness. The tray of crumble was demolished before the movie got anywhere.

Sit and Stay Awhile Apple Crisp
recipe from Ann of Fidget

bake in an 8×8 baking dish or double the recipe and bake in a 9×13 dish
Note: I half the Topping and used 2 large Fuji apples instead.

Filling:
5 to 6 medium-size apples, peeled, cored and cut into 1/4-inch slices. (About 7.5 cups)
3 tbsp granulated sugar (I omitted this as Fuji apples are sweet enough).
1.5 tsp cinnamon

Topping:
1 1/3 cups all-purpose flour
1 1/3 cups lightly packed brown sugar
1/2 tsp ground cinnamon
1 stick unsalted butter, well-softened
2/3 cup finely chopped pecans (optional)
1/3 cup quick oats

Preheat the oven to 350 (~176C). Generously grease an 8×8 baking pan with butter.

Place a layer of apple slices in the bottom of the pan and dust with sugar/cinnamon mixture. Continue layering apples and dusting with cinnamon/sugar until done. Toss the apple mixture until evenly coated in cinnamon sugar. The apples should be just about to the top of the pan (they will cook down).

For the topping, place the flour, brown sugar, nuts, cinnamon and oats in a large bowl and stir well with a wooden spoon. Work the butter into the mixture with your fingertips until evenly distributed. Take one full handful of the topping and toss it into the sugared apple mixture. Spread the rest of the topping evenly over the apples. (I usually end up with a dough-like topping that I just lay on top of the apples).

Bake the crisp in the dish on a baking sheet on the center oven rack until the topping is crunchy and the apples are bubbling, 55-60 minutes.

Serve hot.

Yesterday we celebrated a month of marriage. It seems silly I know but I thought it would be nice to mark the occasion with something special. In my world that usually means cake or chocolate. However, Ive been wanting to bake apple rose tarts for a while now particularly as my mum and aunt made it recently with huge success. Its normally very popular around Valentines Day and Mothers Day so I decided to give it a go. It really is much easier than it looks. This makes for a very impressive dessert with a little effort. Plus roses traditionally symbolise love. J was well impressed as was I! 

There are lots of recipes and videos available online and this is my interpretation. A little clumsy but still pretty and delicious. You can get 6 tarts out of 1 sheet of puff pastry but I made mine extralarge and only made 4! Most of the recipes used jam but I decided to go with melted butter and cinnamon sugar. Apologies for the poor quality photos but it was very late at night! 

 ready rolled puff pastry, 2 red apples, butter, cinnamon sugar and egg wash

 Slice the apples thinly and arrange on a plate. Makes sure you keep the skin on. Microwave it gently for 1-2 minutes until the apples are soft and pliable. 

 Cut the puff pastry into 4 using a pizza cutter (cut into 6 strips for smaller, neater tarts) 

 Roll each sheet slightly to widen and flatten it. Spread some melted butter on top

 Add a generous sprinkling of cinnamon sugar

 Arrange apple slices, overlapping the ends on top of the puff pastry sheet 

 fold the bottom part over and add more melted butter and cinnamon sugar. Starting at one end, roll it up and the apple slices will look like rose petals


 How pretty does that look? I baked mine in a buttered ramekin dishes in a 220C oven for approximately 40 minutes. You can also use a muffin tin if you are making smaller roses.


 They turn out beautifully from the ramekin 

 serve with a dusting of icing sugar
