Apple Pie Cheesecake 12 Weeks of Holiday Treats


12 weeks until Christmas friends.  Yup, I am NOT kidding.  But not to worry because I have your back.  Help is right here for all your baking, treat making, homemade gift ideas needs.  For the next 3 months, one a week you will be handed a variety of amazing and totally delicious recipes and ideas to help you figure out the best of the best for holiday treats.  Yours truly along with a spectacular group of many talented food bloggers will provide you with a plethora of such resources once a week for the next 12 weeks.  So sit back, relax and be ready to drool. :-)
 
 
 
 
 
Speaking of drooling happiness how about a fabulous cheesecake recipe?  You know the kind with apples, cinnamon and sugary goodness all on top? Ahhh yes, an Apple Pie Cheesecake.  Heaven in a springform pan.  HEAVEN.
 
 
 
What could be better than a cookie crust that surrounds a silky cheesecake filling and then topped off with slices of cinnamon sugary dusted apples?  The perfect dessert for a special holiday party or even given as a gift to a special friend.  This cheesecake could easily be made for Thanksgiving, Christmas or even New Years.  A delicious dessert that is easy to make and makes everyone fall over backwards for seconds.
 
 
 
The crust is easily adaptable to your preference.  If you dont wish to use the crust recipe I have to share you can make a graham cracker or even a ginger cookie crust.  Apples go well with a variety of flavors.  I jazzed up the apple layer of the cheesecake by drizzling  it with a lovely homemade caramel sauce.
 
 
 
 
 
Apple Pie Cheesecake
(recipe discovered from Dinner with Julie)
 
Crust Ingredients:
1 cup flour
1/2 cup sugar
1 egg yolk (reserve egg white for later)
1/2 cup butter, at room temperature
 
Filling ingredients:
2 8oz. packages of cream cheese, at room temperature
1/2 cup sugar
2 large eggs
1 tsp vanilla extract
 
Apple topping ingredients:
2 large apples (I used Cortland) - peeled, cored and thinly sliced
1/2 cup sugar
1 tsp ground cinnamon
 
Directions:
1. Butter or grease 9" springform pan and set aside.
 
2. Prepare crust by combining all crust ingredients in a medium bowl.  Mix well all together with a fork or pastry cutter.  Ingredients will be appear as big soft crumbs.  Press mixture into prepared springform pan on bottom and up sides.
 
3. Prepare filling by beating cream cheese and sugar together until smooth and lump-free.  Add in eggs, one at a time and then reserved egg white and vanilla extract. Pour filling into prepared crust.  Preheat oven to 400 degrees F.
   
4. Prepare apple topping by combining sliced apples, sugar and cinnamon - toss gently so that sugar and cinnamon coat apples.  Arrange sugary-cinnamon apple slices over cheesecake filling to cover completely.
 
5. Bake cheesecake for 12 minutes at 400 degrees F. and then reduce to 375 to continue baking for another 30-35 minutes.  Cheesecake will be puffed and lightly browned but slightly jiggly in center when done.  Turn off oven and open door slightly to allow cheesecake to cool for a good 45-60 minutes.   Then take out of oven and cool further to room temperature.  Refrigerate over night before serving. 
 
 
 
Serve with a lovely drizzling of your favorite caramel sauce or freshly whipped cream.  A delight of a dessert!  Enjoy!

I actually have an APPLE recipe for you today instead of a PUMPKIN recipe! I feel like all I do is bake with pumpkin these days.  Which is not a bad thing at all believe me (I ADORE pumpkin!!) - but I like to provide a little variety in my baking to keep my friends, family and blog readers happy. :-)



When I came across this recipe for an Apple Pie Cake my eyes grew wide, my heart started to beat faster and bounced in my chair with happiness.  An Apple Pie Cake sounded AMAZING!  Boy, oh boy was it ever!  So yummy.  So easy to make. AND it only requires 6 ingredients to make!!!! Yup, only SIX

You will need a 9 inch springform pan to make this apple-lious treat. A lovely mixture of brown sugar, cinnamon, flour and (COLD) butter form the bottom, sides and top of this pie/cake.  You will first gently press a large portion of the brown sugar/flour mixture on the bottom and sides of the springform pan, fill the inside with all your prepared tart apples and then top apples with the remaining brown sugar/flour mixture.  Which becomes the top of the pie/cake. It all comes together like magic as you are using such simple ingredients to make a wonderfully unique and delicious dessert.  So grab some apples, your springform pan, a couple of ingredients from your pantry and fridge and preheat your oven to create a perfect Fall dessert.   Then invite me over for a piece - I will bring freshly sweetened whipped cream to go on top! ;-)


Apple Pie Cake
(from the famous Martha Stewart)

Ingredients:

2 cups flour
1 cup packed light-brown sugar
2 tsp ground cinnamon
2 sticks cold unsalted butter, cut into pieces
about 12 tart apples - such as Granny Smith
2 Tbsp lemon juice

Directions:

1. In a large bowl, combine flour, brown sugar and 1 tsp cinnamon. With a pastry cutter add in butter pieces and cut into flour mixture until small pea size pieces remain. 


2. Press 2/3 of the brown sugar/flour/butter mixture on the bottom and up 1 inch of the sides of a 9 inch springform pan. Set pan aside.


3. Preheat oven to 350 degrees F.  Prepare apples by peeling and then slicing into thin slices and placing in a large bowl.  Sprinkle apples with lemon juice so that they do not turn brown and then sprinkle with remaining 1 tsp of ground cinnamon.

4. Place sliced apples into the shell of your prepared springform pan, pressing down gently as you pack them in.  If the apples mound over the edge of your pan that is ok - the more the better!  Sprinkle remaining brown sugar/flour/butter mixture over apples.

5. Line a cookie sheet with tin foil and then place prepared dessert on top before popping the whole thing into the oven.   Bake for 1 hour and 15 minutes or until golden brown on top. When pie/cake come out of the oven carefully run a knife around the edge of the pan and then allow to cool so that the magical yummy treat can set.

Serve at room temperature if you wish!

Hey the last of our fun little Ontario run of shows is TONIGHT in St Catherines. We did Ottawa, Kingston, Hamilton and London, and realized that even though all those places are only a few hours drive away from us, we dont play them nearly enough - all the shows were incredible, packed and sweaty.  The show in London knocked us down a bit, were still sore. A few tickets left at the door for St Kitts tonight, so hope to see you there. SHIT at 815, MOON KING and 9 and were on 10ish.

Wandering around the aisles of supermarkets, it's easy to feel disconnected from your food. The overflowing bins of shiny and uniformly shaped apples and oranges give off the impression that fruit is man-made; the refrigerated, sterile aisles of plastic-wrapped chicken and beef that make you forget that what you're buying was once a living animal. With this accessibility, it becomes easy to take your food for granted. As much as I hate to admit it, I've definitely been guilty of buying too much produce at once, letting it languish in the fridge, and eventually throwing it out without a second thought to the work that went into its production.


But I recently had the chance to tour several apple and pear orchards run by Stemilt Growers in Wenatchee, Washington. Stemilt reminded me of how much care and thought goes into the process of growing and making food. We learned that picking fruit by hand without damaging the fruit and next year's crop is an art, and that human hands will always do the work better than machines. We learned about the H2-A visa programs that enabled this family-owned farm to grow and sustain their production while providing lifelines and steady sources of income for less fortunate families in Mexico. We learned how to train trees to produce different type of fruit than the ones they originally bore, and how the flavors of apples that we get today—honeycrisp, piñatas, sweetangos—came to be.

Perhaps most importantly, we also learned how wonderful and hardworking all the folks involved in every aspect of the apple and pear growing business, (whether out in the field, factory, or office) really, truly are.


And so this month's #humhipieamonth project is dedicated to all the incredibly kind and diligent folks who showed us around the Stemilt Growers orchards. I've been making pies at least once a month since the year began, and for me, the task hasn't gotten any easier. Pie making requires a lot of time, patience, and care—three things I often don't have a lot of— but I knew I wanted to come up with something spectacular to honor the sweetango apples I received from Stemilt. Which is why I'm sharing this extravagant recipe for bacon cheddar apple pie:


Cheddar cheese and apples is an old-fashioned and time-tested combination; the cheddar in the pie makes the dough easier to work with, and its sharp flavor compliments the sweet fruit wonderfully. For a little extra richness, I quickly sautéed the apples in bacon fat to give the pie a slightly smokey, unique (yet somehow still classic) flavor.

Some baker's notes:
  • For this pie, I used the sweetango apples that Stemilt provided not only because they were tasty, but they paired particularly well with the sharp cheddar cheese I used for this pie. Sweetango apples are a relative of the more commonly known honeycrisp, and are as equally sweet, tangy, and crisp. 

  • On that note, a sharp cheddar cheese works best in this recipe — I initially used a mild one, but found that I couldn't distinguish the flavor from a regular pie crust. Even if you don't like sharp cheeses, it's best to use it here since a mild cheddar will be drowned out by the rest of the pie.

Hip! Hip! Hooray! Today is Pi(e) Day!!! All things PIE are celebrated today as the date 3.14 marks the beginning of a very famous number called "Pi" (3.141592653).  Bakers every where rejoice as this day of "Pi" gives us all the freedom to create, master and enjoy the delicious existence of PIE.  A group of such bakers (including myself) have gotten together to gather a collection of a variety of recipes which feature and honor PIE for all of you out there that also LOVE and ADORE pie just like we do! A HUGE bundle of gratitude goes out to Terry of Love and Confections for organizing this fantastic group of bakers to come together with all things PIE for this fabulous holiday of all holidays. You are fantastic Terry for orchestrating all of us!   I choose to bake an Apple Pear Pie with Crumble Topping.  Apples and pears make up the filling along with just enough sugar to sweeten the fruit along with sprinkling of cinnamon and then topped with a tender crumble of butter, sugar and flour. A master piece of a pie.



This particular pie was developed from a vision of mine for the perfect pie.  I wanted it to have a delicate and flaky crust which was then filled with sweet yet slightly tart fruits of apples and pears and then crowned with a lovely tender and crumbly topping.  After combining 3 different recipes together I was able to create my dream of a pie.  Life is good.  Or even better, "life is Pie-LICIOUS"! :-) 



I used Ina Gartens Perfect Pie Crust recipe for my pie crust (which is flaky, delicious and fool proof) and then I used the two recipes below to complete my lovely pie of all pies. I was quite delighted with the end result.

Apple Pear Pie with Crumble Topping

Filling Ingredients
(slightly adapted from Taste of Home)
3-4 large baking apples - peeled, cored and sliced
3 large ripe pears - peeled, cored and sliced
1 tsp fresh lemon juice
1 cup sugar
1/4 cup flour
1 tsp cinnamon

Crumble Topping Ingredients - 
(slightly adapted from Bourbon and Boots)
3/4 cup flour
3/4 cup sugar
1/2 cup butter, cut into cubes

Prepare a single pie crust using a recipe of your choice or even a store-brought crust is fine too.   Line a pie plate with said crust and place in refrigerator while you prepare the filling and topping.

Preheat oven to 375 degrees F.

In a large bowl combine all of the filling ingredients - gently toss together to incorporate fully. Set filling mixture aside as you prepare the crumble topping. 

In a medium bowl combine flour and sugar.  Using 2 knives or a pastry cutter, cut butter cubes into the flour and sugar until the butter is pea sized and uniform.  

Pour filling mixture into prepared pie shell and then carefully spoon topping over the fruit evenly.  Place pie onto a foil lined cookie sheet and bake for 50-60 minutes or until pie is golden brown and filling is bubbly.  If the pie crust edge looks like it is getting too dark, cover the edge with a piece of tin foil.

Cool pie for at least 2 hours before slicing and serving.  A scoop of vanilla ice cream always goes well with this pie.

Fall has arrived and I am totally embracing the season by baking as much as I can with apples. Watch out because I have a bunch of apple recipes coming your way in the next couple of weeks. 

Here is a little picture of our first apple picking outing of the season this year....so much fun but TONS of mosquitoes nagged at us as we picked.  I seriously have no patience for mosquitoes (especially when they bite my kiddos!!!).  Rrrrrrr!!!



 One of the first things I made with the apples we picked that day was a lovely batch of muffins called,  Apple Crumble Pie Muffins.  Seriously, seriously good muffins is produced by this recipe.  And yes, the muffins do remind me of apple pie as they are packed full of chopped apples, cinnamon goodness and a perfect crumble topping. Best of all they are super easy and quick to make.  The longest part of this recipe is the peeling, coring and chopping of the apples.


The original recipe suggested making regular size muffins but I choose to make the muffins in my jumbo size muffin tins.  I was able to make 9 jumbo muffins out of the batter. 

Apple Crumble Pie Muffins

Crumb Topping Ingredients:



1/2 cup packed brown sugar
1 cup flour
1/4 cup unsalted butter, melted
1 tsp ground cinnamon

Muffin Batter Ingredients:

1 1/2 cups packed brown sugar
2/3 cup veggie or canola oil
1 egg
1 1/2 tsp vanilla extract
1 cup buttermilk (I made my own by squirting in a couple tsps of lemon juice into the milk and letting it sit for a couple of minutes)
2 1/2 cup flour
1 tsp baking soda
1/4 tsp salt
2 cups peeled and diced apples



Directions:

1. Prepare topping by combining all crumb ingredients in a medium size bowl.  Set aside as you make the muffin batter.

2. Preheat oven to 350 degrees F. Prepare muffin batter by taking a large bowl and whisking together brown sugar, oil, egg, vanilla extract and buttermilk all together until smooth.

3. In a separate bowl sift together flour, baking soda and salt.  Add sifted flour mixture into wet mixture.

4. Fold in diced apples - mix just to combine....you dont want to over mix batter as your muffins will have a tough consistency if over mixed.

5. Grease muffin tins or line with muffin cups.  Fill 2/3s of the way up.  Sprinkle muffin batter cups with crumb topping.  Pop in oven and bake for 25-30 minutes (time maybe less if making regular size muffins).  You will know that the muffins are done when they are golden brown and tops will spring back when touched.
